An amazingly diverse selection of samples crosses The Macallan whisky making bench every day. Standing at the bench, the Whisky Makers patiently lay the foundations of the entire Macallan range by meticulously nosing and assessing each and every sample. It is here, in the hidden depths of the estate that extraordinary aromas and flavours first fully reveal themselves.

Every so often, a particular cask sample may stand out, taking the whisky making team by surprise. It may be its unique floral aroma or a particularly distinctive spice in the taste. At the moment of discovery the Whisky Maker may decide that this cask has a different destiny, for the whisky to be treasured in its own right. And so the cask reserved.

Every single bottling of Exceptional Single Cask is unique in its own particular way. Each individual cask selected by The Macallan Whisky Makers was chosen for its distinctive characteristics. Now you can explore and enjoy the same sensations in aroma and flavour and experience some of the discoveries made at The Macallan’s whisky making bench.

NOSE: Rich soft berries. Summer fruits of blackcurrant with polished oak and dried figs.
TASTE: Sweet raisins, delicate nutmeg and wood spice.
FINISH: Rich sweetness with a spiced background.
This Exceptional Single Cask whisky will be available in the US and Asia from November 2017
NOSE: Dried raisins with honey roasted almonds.
TASTE: Strong root ginger, with honeyed almonds and oak.
FINISH: Spice tingle at the front, leaving a sweet nut mouth coating.

NOSE: Rounded and balanced, with rich dates and sultanas. Hints of toffee and chocolate.
TASTE: Full bodied, with sweet toffee and oak, juicy raisins with a background of ground ginger.
FINISH: Lasting sweet mouth coating, with a gentle warming.

NOSE: Vanilla pods rounded with summer fruit berries. Sweet toasted oak.
TASTE: Toffee sweet with a background of sweet cinnamon.
FINISH: Sweet and warm.

TASTE: Figs and sultana, with root ginger and vanilla.

NOSE: Fruit cake mix, sticky sweet figs and strawberry jam.
TASTE: Orange peel with ground nutmeg and Christmas cake.

THE RANGE
14 Exceptional Single Cask whiskies will be available in 2017, bringing this unique new range of The Macallan to retailers and bars in cities around the world. The first 7 casks will be available from November 2017 in the US and Asia. A further 7 casks will be released at the end of 2017 extending the availability into key cities in Europe and the Middle East, as well as at The Macallan Distillery.
The Macallan Exceptional Single Cask range will be available in Global Travel Retail from early 2018. Initially two casks will be selected by our Whisky Makers with the resulting Macallan whiskies exclusively available to travellers in select airports. These Exceptional Single Cask whiskies will be presented in a dark grey gift box with a gold-foil label.

Sign Up HereOne of the fundamentals in the creation of every Macallan expression lies in the careful planning of cask selection.
The warehouse sampling team, led by the warehouse operations manager, draws the precious samples from the casks shortlisted by The Macallan Whisky Makers.
The cask samples are then labelled and hand delivered to the whisky making bench, ready for the careful consideration of the Whisky Makers.
The Whisky Makers then assess every sample, taking into account the detailed nuances that each displays through the natural colour and the complex aromas. Most of these whiskies are then combined to make The Macallan whisky in question but some may be returned to the warehouse for deeper and longer maturation.
Occasionally, just very occasionally, a particular sample will stand out and the cask will be set aside for The Exceptional Single Cask Reserve.
